Formulation and Sensory Evaluation of a Ketogenic Snack to Increase Compliance on Ketogenic Therapy

The Formulation and Sensory Evaluation of a Ketogenic Snack to Increase Compliance on Ketogenic Therapy is an effort to increase compliance and nutritional status of those utilizing ketogenic therapy. The project focus is the development and sensory analysis of high fiber ketogenic snacks. Compliance with ketogenic therapy often presents difficulties due to a highly restricted dietary reginm. Designing easily accessible ketogenic snacks may help with compliance, and encourage diversity in ketogenic therapy. Maintaining aqequate fiber intake with ketogenic therapy is often difficult with such limited intake of carbohydrates. The ketogenic snack project utilizes fiber isolates to increase the daily intake of fiber. The focus of Formulation and Sensory Evaluation of a Ketogenic Snack to Increase Compliance on Ketogenic Therapy project is to provide easily accessible snacks that will increase compliance and nutritional status through the development and sensory analysis of ketogenic snacks.
